
I started making these simple egg bites to cut bread out of my breakfast. I love a slice of toast, or an English muffin, a bagel with cream cheese, waffles; you see my challenge. I needed something filling, and low-calorie. Egg bites!
This recipe is quick to make. You will only need four ingredients! (And a muffin tin) This is a great grab-and-go meal! Store and refrigerate the egg bites, then reheat in the microwave.

Prep Time:10 mins
Cooking Time: 25 mins
Ingredients
10 eggs
Thinly sliced deli ham
Shredded cheese
2 green onions
Directions
*preheat oven to 350 degrees F
Step 1: Generously coat the cups of a 12 cup muffin tray with cooking spray
Step 2: Line each cup of muffin tin with a slice of deli ham
Step 3: add a pinch of shredded cheese to each cup. I used shredded marble cheese
Step 4: Crack eggs into a medium sized mixing bowl
Step 5: Dice up green onion and add it to the eggs. Whisk. (Transfer after mixing to a water pitcher)
Step 6: Evenly pour the egg mixture into the ham and cheese cups
Step 7: Bake for 25-30mins. Until egg mixture is set.
