This is a quick recipe and low in calories. Seafood is easy to prepare and is often a healthy choice. An average serving of mussels has about 20 per cent of your daily protein.

Serve these Thai Steamed Mussels as an appetizer or make this a meal, just add a simple side salad and a baguette for dipping in the delicious and fragrant broth.

There is really no work to preparing mussels. Buy them fresh and once home soak them in cold water for about 15 minutes. Scrub and debeard the mussels (pull out the seaweed and debris that collects around the shell). Healthy mussels will have shiny shell and remain closed as you wash them, DISCARD any mussels that are opened or have a broken or chipped shell. Before serving, throw out any mussels that didn't open in the steaming process.
