I’ve previously posted about my kids' favourite chocolate chip cookies, now it’s time for my husband’s fave. No-Bake Haystack Cookies are mixed in one pot. Just drop this mixture by the spoonful onto a baking tray and freeze for a delicious cocoa and coconut infused cold cookie! (Try saying that three times fast)

No-Bake Haystack Cookies

These cookies come together in minutes. Make sure you use quick cooking oats. Plain oats will be too chewy. This recipe makes 22-24 large haystack cookies. Use parchment paper to line your cookie tray for easy, no-stick, cleanup.

 

No-Bake Haystack Cookies

22-24 cookies

Prep time:10 minutes


Ingredients

  • 2 cups sugar

  • ½ cup milk

  • ½ cup unsalted, butter

  • ¼ teaspoon salt

  • ½ cup unsweetened cocoa powder

  • 3 cups quick cooking oats

  • 1 ½ cups coconut


Instructions

  • In a medium-sized pot on medium heat, let your butter melt (watch carefully)

  • Add the sugar, cocoa powder, milk, and salt. Stir until mixture starts to bubble on a low boil, now reduce heat to low.

  • Add quick cooking oats and coconut. Stir again. Turn off element.

  • With two spoons scoop up the warm mixture and drop onto a cookie tray, lined parchment paper. (The cookie mixture will cool quickly, so be efficient!)

  • Place your cookies in a fridge or freezer to cool for 1-2 hours. Serve. (My family keeps the cookies in the fridge until they are all devoured. These are best cold) 🥶
